AOC Patrimonio Red 2007

Geology Place named  E CROCE clay-limestone soils with  bands of schist.
Method of cultivation Traditional.
Vine variety 90 % Nielluciu and 10 % grenache
Density 4000 feet / hectare.
Yeild 40 hl / ha.
Vintage Manual, grape selection, they should be wholesome and ripe.
Vinification Grapes are destemmed, macerated in stainless steel tanks under the controlled temperature between 25° and 30° C for 12-15 days. Every day pumping over for an hour. Then the grapes are removed from fermentation vats and pressed. First fermentation wine and free run are mixed.                                                       
Fermentation In stainless steel tanks, thermo regulation at 18°C, from 15 to 20 days.  Primary fermentation and malolactic fermentaion take place before racking.
Maturation 12 months minimum in a stainless steel tank.
Filtration Light filtration through filter pads  before bottling.

Comments on tasting

Robe: fine dense deep ruby

Nose: fine red fruit aromas: blackcurrant and black fruits; blackberries, with a slight touch of licorice.

Mouth: rich, full of red fruit, well-structured, an elegant tannic note with a long finish. 

How to drink it

Matching food with wine is red meats and fowl, meats in sauces as well as all kind of cheeses.

Served at ambient temperature, to be opened preferably an hour before drinking.

Can be conserved without problems for ten years, laid down horizontally in a dark place.

Should be put in carafe after long conservation.
