AOC Patrimonio White 2008

Geology Place named E CROCE, clay-limestone soils with  bands of schist.
Method of cultivation Traditional – Soil cultivation – Organic enrichment – no herbicides.
Vine variety 100 % vermentino, traditional Corsican vine variety.
Density 4000 feet / hectare.
Yeild 40 hl / ha.
Vintage Manual, grape selection, they should be wholesome and ripe.
Vinification Pressing of the whole vintage. Cold settling at 8° C during 24 hours, fining on must.
Fermentation In stainless steel tanks, thermo regulation at 18°C, from 15 to 20 days, without malolactic fermentation.
Maturation 6 months minimum  in a stainless steel tank.
Filtration Light filtration through filter pads  before bottling.

Comments on tasting

La robe est claire, d'une belle couleur jaune paille, avec des reflets verts.

Robe: limpid, beautiful yellow straw color with the hints of green color.

Nose:  with fine white flower, hawthorn and honey aromas

Mouth: long-tasting, with an aromatic persistence..

How to drink it

An ideal wine to accompany fish, shellfish, fowl and white meat, but also foie gras and goat's cheese

Served cool, between 8 and 10°C.

Can be stored laid down horisontally in a cool dark cellar for 3- 5 years..
